SPRING ONION FRITTATA
(1/4) CUP HALF & HALF
(1/4) CUP OLIVE OIL; USE EXTRA TBSP FOR SAUTE
(4) SPRING ONIONS, CHOPPED
(1) CUP FIELD PEAS, COOKED
(1) CLOVE GARLIC, MINCED
(1) TEASPOON SALT
(1) TEASPOON PEPPER
(1) CUP SHREDDED MOZZARELLA CHEESE
Blend the eggs, half & half, and olive oil in a blender for (30) seconds. In a medium-sized skillet, saute the peas, garlic, onions, salt and pepper in the extra tablespoon of olive oil for (5) minutes, then remove from heat. Put the vegetables in a bowl and pour the egg mixture into the skillet. Sprinkle half of the vegetables and half of the cheese over the top of the eggs and bake for (10) minutes at 375 degrees F. Add the rest of the vegetables and cheese and bake for another (10) minutes. ENJOY!
I think this is yummy for breakfast, brunch, or a light lunch.
