** DINE WITH THE IRISH FOR A DAY **
I had a primarily Irish father and a Cherokee Indian mother, and I must admit that I lean towards favoring Mama’s favorites more than heavy Irish meals with lots of meat. BUT I do enjoy this Recipe:
“CORNED BEEF & CABBAGE”
(1) corned beef brisket
(3) quarts water
(1) onion – diced
(5) carrots – cut into 2″ pieces
(5) stalks celery – cut into 2″ pieces
(7) red potatoes – halved
(1) head cabbage – cut into 3″ chunks
Salt & Pepper To Taste
Combine beef, water, onions, carrots, celery, salt and pepper in a large pot and bring to a boil. Reduce heart and simmer for (3) hours; until the beef is tender. Add the potatoes and simmer for (30) minutes. Add the cabbage and simmer for another (30) minutes. Remove the beef and slice. Serve in a bowl with the broth and vegetables.
TIP: an authentic Irish Dish to be enjoyed on St. Patrick’s Day or any day! ENJOY!
